Recipe: EW Mom's Banana Chocolate Chip Bread

With two weeks to go until my due date, and enjoying my time off work - I've been nesting and resumed a long time hobby of mine - baking.   My original banana bread recipe was given to me by a friend in high school. Over the years, I have subsequently added a few little special touches (chocolate chips, cinnamon and oatmeal) to make it my own.  This banana bread recipe has gotten rave reviews and now I'm sharing it with you. I hope you and your family will enjoy it!

Ingredients:
  • 1 stick butter (1/2 cup)
  • 1/2 cup sugar
  • 2 eggs
  • 1 3/4 cup flour
  • 1/4 cup loose oatmeal (I used quaker 1 min quick oats)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 extremely ripe bananas
  • 1/2 teaspoon vanilla
  • A handful or so of chocolate chips (as many as you like!)
  • Dash of cinnamon
Directions:
  1. Preheat oven to 350 F
  2. Mash bananas in a small bowl - set aside
  3. Cream butter and sugar in a large bowl, add eggs one at a time, add vanilla
  4. Mix Flour, baking powder, oatmeal, and salt in a separate bowl
  5. Add dry mixture to butter/sugar/egg mixture, add mashed bananas, chocolate chips.  Sprinkle in a little cinnamon, and stir to blend (batter will be lumpy!)
  6. Pour into a loaf pan. Bake for 50-60 min or until done.
